28 September 2021 bottling A pleasant Lambic to sip, still full of complexity but much milder and goes down easier due to it being still. Notes of tart grape skins, sweet flesh nd peppery pit. Light overall peppery-ness. Nose has cheese nd vinegar funk.

Thank you Matt M. Beautiful version of this, great lambic body and dry finish, nice wine like character with hay notes coming through. Not sour, perfect expression.

Nose is funky and tart, slight oak somewhat acidic. Light golden color poured flat. Taste is tart apple with a huge of oak and some yeasty funk. Smooth no carbonation finishes soft.

Says not to put yeast in but the taste was heavily muted until I did. Pours nearly still, slight tart apple funk, and light acidity. Dumping bottle increased the funk
