16 September 2016. Best bottle of classic gueuze I’ve had in a few years. All the right dusty grapefruit notes with ultra low acidity and impeccable balance. This is a magic batch. Seek it out. Thanks Mike R.

2/1/16 bottle for Pat’s birthday session last night. Wet oak, pepper, burnt lemon, horseblanket, leather, firecrackers, Arnold Palmer, and funky yeast. Restrained acidity with a silky mouthfeel.

Bottled 15 December 2016. Loud, jolly POP!. Nice amber colour, some lovely carbonation. Damn funky smell, heavy cheesyness, plenty of oak, hint of hay. Good carbonation in mouth, very mellow feel. Taste is funky, lightly sour, dry, french cheese rind. Yum

Wanted to try this after 10 years and couldn’t hold out more than 5. Me thinks it would absolutely be stellar after 10, 15, prob 20 too. No patience.

Heerlijk frisse lambic, veel licht zuur fruit, met name groene appels. Beetje witte druiven en lekker funky. Ook een mooi bittertje op de afdronk.

8 Oct 2016, 375ml. Cellar check. Doing well, has added a bit of sherry like oxidation. Brewery funk and cobwebs going strong. Perhaps a bit less acidic than fresh. Good Brett presence. Slightly doughy grain, lemon citrus zest.
