Beer #7 during today’s “Into the Wine” tasting conducted by Moeder Lambic & Cantillon in Salle Ogivale at Hotel de Ville on Grand Place in Brussels. What an amazing experience!

Red wine grapes, very tannic. Personal favorite so far of tasting session Into Wine by Moeder lambic / Cantillon with lambic and wine.

One of the few wow beers, wish it had been a proper pour

Jeudi 14 avril Cantillon. J’ai adoré celle là. Un beau tart mais qui est soutenu par les raisins tanniques, beaucoup de mûres/raisins, gros corps sans être trop astreignant.

4.30. Cherries. Red wine. Almost the same nose and palate as the corresponding wine.

Into the Wine. The wine was quite sharp with loads of tannins. Beer was more balanced.

EB Quintessence Trip April 16-19. Very heavy on the grapes with plenty of black currant and black cherries but still the lama box manages to pierce through. Truly a wine and lambic hybrid and utterly delicious!

That new batch is great, a little more time and it should reach the level of the previous vintage. One of my all time favorites, it has all you can want from an intense grape lambic! Huge elderberry fruitiness & tannins, blackberry, tannic finish, pepper

Vinös, fruktig, väldigt bärig, lite kryddig, elegant.

Very well done. Seems a little young for the depth of flavor achieved in the previous bottling

EB Quintessence Trip April 16-19. Another bottle to really dive deep into this marvellous blend. Last beer of an extremely long day though so uncertain how deep we got 😅

Super smooth and easy drinking. Zero harshness but a little muted, if anything. Flavours are decent though. I could drink this all day. Dark berry flavour, whatever that means. Prickly, blackcurrant, blackberry, perhaps some raspberry.

Bien meilleure que le souvenir que j'ai de la 2015. Des fruits et des tannins plus fondus, et beaucoup de poivre noir. Vraiment intéressante.

Thick. Deep fruityness, pulp and grapeskins. Bit like an aged wine. Tempered but deep sour. Soft and rich aftertaste. Another great one.

Vol. Tannines. Vrij complex, hint van rode wijn.

This was incredible. So wine forward but zero acidity. Probably the most wine like lambic I’ve ever had. 😍
