Granite. Vinous. Very wine-like, but stil effervescent/crisp/light body/drinkable. A lot going on, but I liked it.

13 November 2017. Distinct seedy red grape sweetness, tons of brewery funk, light lemon, not particularly tannic. A nice expression of grape in lambic. Mild acetic acidity, very tasty.

Pressed lamb leg - herby radicchio - fried potato - lamb jus Combo didn't work so great actually funnily enough. Dish was so powerful it took over the beer. Next time - lagers only! Beer was so fruity, dank, grapes come through nicely with some funk

Aromas of musty grape skin and sweet grape with the typical Cantillon funk. Additional notes and tastes of light leather, lemon zest, and a touch of oak. More vinous towards the end. 4.4

Lovely and soft. The weight and texture were very elegant. As it opens more red fruit joins the earthy vinous character. One of the better bottles I've ever had

EB Frilltessence 2023. Paired with rillette. This vintage is really starting to find its prime. Lovely grape character and a ton of amazing funk!

Vinous aroma somewhat like lingonberry coupled with horse blanket, wet hay, with a raspberry sweet-tartness. Medium tartness, exquisite balance. Raspberry-like tartness with a delicate vinous undergirding.

Haven’t had one of these in a while and this 17’ doesn’t disappoint! Delicate red fruits intertwined perfectly with the lambic base. Just perfect!
