Smaking av Levain Savagnin, Cantillon La Vie Est Belge og Tissot Chateau Chalon (vin), samme drue. Levain tørr syrlig eplesidereddik, hazy hvit. Oransj Cantillon mer restsødme, større og rundere, og vinen har den vakre vin jaune-oksideringen. Nydelig.

Wonderful lambic for lunch. Balanced as a beast. Vine jaune note not too pronounced, even if well recognizable. Lambic came over in the most proper way, it could improve even better. Acidity is mild, big tartness on finish. Brett, leather, vinous. 4.80

For the age this is perfect right now, could be a hint less acidic. I get wild honey, herbs and spices, wet wood and hints of smoke with a super long nutty finish (think caramelised pecans and walnuts). Delicious!

Next level. Big, bright citrus/stone fruit hit before the funkier Geuze characteristics and slightly peppery finish that Cantillon can have. More tart/funky than most Cantillon to me - kind of 3F level - but the insane fruitiness added another dimension.

Amazing, lambic perfection. Lemon brightness and aromas dominate when cold, while a delicate and tasty funk becomes more present as it warms. This is rounded out by light peppery notes reminiscent of Mamouche and near zero tartness. Easy solodome.
