Getting gentle as it ages, but I think need more time to get balanced with tarty, red graped, cherish and funky flavor. To me, not it’s little bit mess

Really surprised that for 4-5months, it ages so well. On February it was too tarty but now, Gently funk with red graped flavor. It balanced soooooo welll.

Nice nice nice. Funkier than SL, more flat fruit flavor but more woody and well balanced!

One of my favorite Cantillon lambic. Little but nutty like sesame, sweet, and woody. Well balanced! I just hope it has more cognac character.

Cantillon Rose de gambrinus Bottled : 30/03/2022 I have no idea but more funkier scent than usual of course at the same time, raspberry, cherish. Not that tarty, nice red fruited sweet-sour balanced. Definitely young, but I can say it’s quite gentle :

Poooo… dirty, cigarette, rotten trash bin smell.. Greeny, like chewing juicy leaves. I think there’s something wrong with that.

Full of gently aged grapes, black berries flavor. There’s also kind of yogurt flavor, that makes nice balance with other things. Also I like this lovely wood smell at last point

Lightly soapy, elder floral, little bit tarty and not that acidity. Little bit bitter with hoppy flavor, spicy at last. Vinous finish, and after drink funky smell came through throat to nose. Love it.

Quite interesting experience to try it. Never had this kind of lambic before. Floral, herbal funky flavor with spicy things. Interesting.
