Wonderful amounts of sherry. 03 Sept 21 bottle

Funky aroma, lots of Brett funkiness. Cloudy golden color, no head, low carbonation. Complex tartness/funkiness, flavors of white wine with the tiniest hint of orange peel. Tartly funky finish.

Soft, barnyard funk, notes of sherry, some apple, vinous, wood and dry. Great.

Subtle mandarine and peach in the nose, low carbonation, orange zest, slight bitterness in the finish. Vinous. Nice

Flat, sherryfat, som gir en subtil fruktighet (stenfrukt, dempet sitrus) inn i en nydelig og kompleks lambik. Mmm!

Lambic bello piatto. Al naso legno e un timido funk. Gusto delicato e liquoroso. Finale secco. A sensanzione il grado alcolico si sente ma non disturba. Birra complessa da bere con calma e con la giusta compagnia.

Tres nice encore une fois. Nez sur la boisé/caramelisé du xeres , pas tres acide , pas trop de carb .

I think they did this no favors by pairing it with the wine. The wine was great but super punchy while this was soft and creamy and on the subtler side. Would love to revisit a bottle!

The final result is not so special but I liked it in the end. Has so much from the wine, not an easy one to take on a leash, but the lambic still stands as a good base. 4.3

The sherry felt excessively light, the lambic was better matched with the sweetness s.t. the acidity brought out more appley sweetness. However the final product was still too delicate for being the 9th glass. But maybe a VORS with lambic? 🥰
