At a festival of lambics #Quintessence2022 this aged rhubarb lambic is a perfect sweet & sour marriage, like really reduced down rhubarb compote that just happens to be boozy.

I remember having this fresh at Cantillon in 2017 at the brewery, and it was the only bottle we couldn't finish that day. Excessively Rhubarb with that "cat-litter" essence that I didn't like. It aged amazingly, with rhubarb complementing the funk. ⬆️4.35

Lovely drink in a lovely spot! Fair whack of sulphur on the nose. Sweetness from the rhubarb but fruit isn’t the huge hit like when fresh. Banging though.

P’tain ce nez est quand même pas ragoutant. Entre soufre et combustion de cigare. La rhubarbe est discrète (4 ans quand même), et c’est pas si acide. Carbo quasi flat. Ça s’ouvre un peu avec le temps mais je trouve quand même pas ça incroyable.
