Dry grapefruit, wet wood. Pine needle, tree bark. Honeydew melon when first opened. Bright hop characters really show through.

Totally underrated bottle. The noble hops bring a spicy bitterness and floral character to the cantillon lambic. Plenty of cereal and mineral notes. Soft mouthfeel and light carbonation. Delicious.

So fruity and Hoppy in the nose, with earthy, cellar and cheesy aroma. Quite citrus, slightly peachy, oaky and lovely dusty end. Moderate to High level of sourness for a lambic. Its a perf bottle.

15 Feb bottle. Haven’t had CSG in a while, and this is great. Not far off from eg De Garde dry hopped sours on the nose but in the palate clearly Cantillon—the young lambic and hops together remind me of being at the brewery.

Mooi uitgebalanceerd. Nee, zeker geen hopbom maar wel een goed waarneembare bitter die tegen het zuur opbokst. 👌

Season 19/20 前に飲んだのも2019だけど18/19。今回のは違うボトリング。 ホップの香りと苦味は効いてるけど酸味はかなり穏やか。

RUSG, mooie herinneringen daar bij de tifo’s van de koninklijke St Gilles voetbalclub. Het spandoek met le Cantillon c’est bon zag ik in het stadion van deze 3e klasser in Brussel altijd hangen. Briljante slogan natuurlijk. + 0,25 ster voor het sentiment

Me parece deliciosa, fresca y bebible, sin excesos ácidos ni nada así. Tonos de fruta, manzana verde y pera, algo herbal y cítrica con cierto toque de melocotón, seca al final del trago pero nada áspera, levemente astringente. Muy chula

Aroma frutal y herbal. En sabor pera, manzana ácida, algo de melocotón (fruta de hueso), hierba fresca y esa acidez calida pero bien equilibrada, con esa sequedad que hace seguir queriendo más.

Cracked on 4/3 at Monk’s Cafe. Not my favorite Cantillon, but it’s still Cantillon. Farmhouse, musty funk, earthy funk, hay, wet grass and a slight German hop character (Noble) sharpness. My taste may have been off slightly lol
