Slight acetic hint on that bottling, but not unpleasant, almost integrated. Otherwise all the citrus juiciness and candied grape you usually get, lovely.

So fresh still, impressive. Not 2013 level but not far, loads of almond/marzipan, cinnamon, oak, funk, and light nutmeg. One of the GOATs for me.

A little less vanilla than other vintage, might be from the age too, at least partly. Slight acetic note from the raspberry, fine but I wouldn't wait any longer. Dusty and funky, plenty of carbonation, very fruity with a soft vanilla background

Still one if my favorites, so good, especially after it breathes for a bit. Loads of candied grape, beautiful. Also hints of kiwi, green apple, Cider apple, clean dusty funk, oak, quince. Long soft vinous finish. Love it.

Turnd out it's still available! Different from last time but no false note on this bottle, really good. Lots of honey and liked walnut, hints of herbal notes as well. So good.

Lots of finesse in that bottling, oaky and vinous, smells like Cantillon's barrel room. Cider apple, candied sugar, mineral notes, little hint of leather, lemon and candied sugar in the aftertaste again. Very good, and will get better.

Very funky dusty and animal, horseblanket, old cellar, slightly nutty. Quiet a short finish but very good overall.

On draft, lots of sulphur notes at first but once it breaths for a bit it's delicious, fruitier than in bottles.

Leathery, oaky, candied sugar too. As far as straight lambic goes, that's the good stuff.

It was better out of the barrel, might be in a bad phase right now, very buttery. Nose is like candy. These bottles will need some time.

2016 label. Gets even better with time, very leathery with cognac hints. So good.

All I hope it would be. Similar notes to LVEB with walnut and light curry hints, but with a sweeter backbone of dark honey, hint of botrytis like notes and brandy. Absolutely fantastic.

Really good, very similar to an orange muscat wine. Juicy apple notes, floral, almond, quince, pear, .... very juicy grape overall. Easy drinking and complexe, great stuff.

Loads of kiwi on the nose crazy! Also tart Cider apples, then wine grapes. Tart with a long white grape tannic finish really good.

4.4. More rosè like than expected, lots of hibiscus and mild pink berries, mild tannins, red currant and a vinous finish. Good, though trousseau isn't that obvious, but still very good.

Gewurztraminer Lambic (2020) G.
Delicious! Enjoy it much more than the old Gewurz bottle, though the process isn't the same. All you hope for here, not only juicy mellow white grape but the typical rose and litchee notes you get from this varietal as well, on top of funk and minerality

Fou' Foune - Non Refermented (2021) G.
The addition of Italian apricots makes it very different, you get the sweet soft juiciest of the French fruits and the flesh tartness of the Italian one, almost peachy. Really nice twist on Fou.

Different this year, has a portion of Italian apricots which are tarter, almost seems like an apricot and peach blend, really nice variation.

Very orange wine forward, but very different from Racine or Sophia, more contrast in between the sweetness of the wine and tartness of the lambic. Nice nutty notes and candied citrus coming through, should evolve very nicely in a few years

Very aromatic and soft, peachy, red currant, strawberry super smooth palate, again very soft. Great tribute to Poulsard wines.

So much orange!!! Orangina lambic. The nose is insane. Keg experiment though, the bottles are more balanced visibly. I love it though.

Way tarter than last time I've had it. Still very good but quiet acetic and aggressive, not for the faint of heart. Yet those raspberries are delicious!

Fun brew! Like a Nelson Sauvin NEIPA on steroids. Loads of vinous white grapes backed up by gooseberry, earthy notes, pineapple. Medium mouthfeel, juicy with a earthy vinous finish, again very white grape forward, cool stuff.

Good! A little on the sweet side but not in a wort kinda way, rather lemonade like. Lots of candied lemon but also white grape, especially on the palate. Simple but nice easy going AF beer

Really love that Viognier version, the grape really shines better than previous batches. Cantillon funk and vinous white wine all the way, lemon and stone fruits, delicious.

Holy shit! Werther's original in a glass. Tons of milky caramel, backed up by sweet and spicy rye whisky, warm but perfectly integrated. Decadent treat. Vanilla, choco sauce, toffee, coco, ... sweet but in the best way. Love it!

This was pretty nice, lots of aromatics from the different grapes used in the blend, nice nild Cantillon funk, you really gets that this is an hybrid and not just grape added straight on lambic, very borderline of both worlds.

2014, liked it better than the 2019 batch, more grape forward and of course a bit of extra age helps.

A pretty nice aged gueuze with a hint of white grape, good but not the most fruit forward and inpossible to pick up the varietal's characteristics. Still nice.

Nose is nice on ripe mirabelle, palate starts full juice and ends with a tart note which I am not sure about, bit lactic but a tad unusual, which is probably a sign it needs more time. The lambic base doesn't show much, no funk or oak. To try later again

Definitely not ready yet, just started refermenting and it's basically (delicious) sweet apricot nectar right now. Still, not as bold on the fruit as 2019,more on the discrete side, a bit like 2017 when it came out.

Best of the bunch as far as classic Fou taste goes (2017 is also awesome but a very different beast right now), super fruit forward but also pretty funky and till allows the base to shine

Almost grappa like, with sweet fortified wine on the nose but yet pretty dry. A bit boozy (9% abv) but in a good way, very interesting.

4.35, you get sweet, sour and tannic grape notes, with the tartness and strong tannins remaining afterward.

Huge barrel on the nose. Leather, dark honey, red grapes w/ hints of elderberry & black currant, oak, funk. Almost flat, palate pretty similar w/ a mild tannic but smooth finish, w/ a nice vinous aftertaste. Probably needs to be blended, but still killer

For a second use barrel, loads of vin jaune. Awesome obviously, on the dry side of these, w/ a hint of gooseberry, otherwise the usual walnut and curry notes I love.

Only 2 years in the bottle but getting close to it's best profile imo, which usually comes after a couple extra years, but it's fire right now. Loads of almond and cinnamon, super juicy bold cherry, funk. Yummy.

New upcoming 2020 batch, with a small portion aged in a rum barrel, very little though. Still there is a bit of extra caramel/molasses sweetness compared to previous batches which might lead you to think it's there, but it's also pretty young.

LCI at BXL beer fest last year. Much drier than the other batches, delicious obviously, though 2019 is the big winner for me.

LCI. 4.3, might be my favorite fresh Nath yet, still a bit sulphury but less and the rhubarb seems more pie like. Will age nicely!

Past its prime, still liked it but very acidic with signs of oxydation, the cherry is there and jammy but more in the back, with notes of varnish and stone fruits, bit of almond. Clean funk. Alright but the 2004 De Cam from yesterday aged better.

This was absolutely beautiful, might be my favorite beer this year, right before Chardonnay. Still needs a little time but the orange wine character from the macerated grape is shining amazingly here, lots of juicy citrus and almond, smooth vinous. Love!!
