Zwanze 2024 - MMXXIV

Lambic - Gueuze

A little over a year ago, we were in Brittany to submerge a few dozen bottles of Gueuze in the sea as a collaboration with Sylvain, an abalone farmer in Finistère. These bottles are still fermenting at a depth of 10 meters in the company of his charming creatures. Once a month, Sylvain brings up the cages to add various types of algae for the mollusks to feed on. We tasted these same algae in tartare during our visit, and the idea came to us to try them in maceration with Lambic to create a partnership between the brewery and Sylvain's company. After several attempts, it turned out that seaweed, specifically the sea lettuce, gave the best result. The beer is, of course, very different from the fruity, vinous, or floral tastes traditionally found in our products. This Zwanze 2024 exudes aromas of exotic fruits; it has notes of iodine with a slight salinity reminiscent of oysters. In short, a very different beer from what we are used to discovering at Cantillon - a true Zwanze!

Salty, sour, almost oyster creaminess. Super dry, it just vanishes with a puff of the ocean. Definitely has that lambic tone to it too. Feeling very privileged to be able to drink all the beer today.

Happy Zwanze Day! Kelpy, salty and I don’t know, iodine hitting you in the nose and all the way down. It’s a meal of beer, although the flavour is a lot lighter on the mouth than the aroma would suggest.

Interesting beer. There’s a lot going on - some peach and apricot notes, with a mild, briney salinity. The acidity builds as you go, and ends up being quite strong. Unusual and fun.

The rocky aroma of the aosa seaweed spreads powerfully and is neatly summed up by the acidic aroma of the wild yeast. Fresh on the palate, the aosa assertiveness is mild and the apricot and pear-like sweetness spreads out refreshingly.

Just weird, aroma in really briney and seafood. Taste kind of follows, like juice olives were in mixed with oysters. Better if you hold your nose, but still not pleasant. Eating based on how much I personally enjoyed this beer.

미역처럼 미끄러운 질감. 복숭아 느낌이 은은하게 난다. 드래프트 람빅답게 묽은 느낌도 강하다. 마신 후에도 뭔가 입 안이 꽉 차는 여운이 난다. 해조류 느낌이 강하다. 크게 한방 터뜨리면 좋을텐데 그런 느낌은 잘 안 나서 아쉽다. 복숭아 등 과일 맛이 더 쎄게 치고 들어왔으면 좋았을 것 같다. 막판에 신 맛이 조금 더 치고 올라오는 느낌이다.

2024.04.20. Too much seaweed characters.. I repeat, too much…! The base was a quite moderate lambic with citrusy sourness and stone-fruit-like sweetness. But the flavors were not so impressive that the seaweed characters overtook the whole palate.

Really interesting. Decent stone fruit in the nose - think leach and even more so, apricot. Body carries ut all nicely. Salinity is expected but not overwhelming until it warms. Then it drives it further. Semi-dry throughout.

カンティヨンを色々5杯飲んで戻った。海苔だねえ。ちょっと柑橘強めに感じるようになったかな。口か樽位置か?意識したせいかトマト香というよりは海苔な香りの方を最初から感じるな。冷静に飲むとこの塩味とランビックというのは悪くない組合せな気がする。ある意味スポドリに通じる組合せなのか、と。そういう意味では海苔というか味噌汁を飲まない海外なら受ける可能性があるのかも。
