Had to get a couple Cantillon tries on while here while it’s on the menu. Wow what a complex beer. Very acidic and salty. Sort of wrecks the palate but has a nice citrusy and clean finish.

Super unique, very fun to revisit again after Zwanze. I enjoy but can see this being polarizing.

The background on this vintage is a wild story. Get a lot of sea flavors in the aroma but the flavor is mostly subtle. Nice to taste this beer to its full potential vs what we had at Zwanze Day.

The rocky aroma of the aosa seaweed spreads powerfully and is neatly summed up by the acidic aroma of the wild yeast. Fresh on the palate, the aosa assertiveness is mild and the apricot and pear-like sweetness spreads out refreshingly.

Some people hated the nose, others didn’t like the palate. I thought both were pretty great and evolved nicely through multiple sips. Definitely a one of a kind beer — fruity, briny, beautifully bizarre.

Wow! Smooth and unlike anything I’ve ever had. As described. Dank a little fruity with lemon sourness with a defined seaweed brine. Limited quantity with this guest beer on Tap: happy to have dropped into Mother Tree this evening to enjoy these Lambics.
